"Goishicha" is a fermented tea produced in the mountains of Otoyo Town, Kochi Prefecture.
It is a valuable tea that has been produced since the Edo period, some 400 years ago, and is made in a two-stage fermentation process: aerobic fermentation by mould fungi in the chamber, which has remained since ancient times, followed by lactic acid bacteria fermentation.
The tea has a refreshing aroma like red shiso and a strong sour taste like Japanese plum ume produced by such a special manufacturing process.
It is a nourishing tea with a unique taste, but one that blends easily into the body. As it contains little caffeine, it is recommended for use before bed.
